Terroir and Vinification: Crès - South/southwest facing slopes - Old vines - Yield 25-30 hl/ha - Harvest at optimum ripeness. Total destemming of the harvest. Traditional vinification. Extraction by rack and pinion exclusively. Long macerations of 30 to 40 days. Aged in our cellars in oak barrels (40%) and in vats (60%).

Tasting: Dark, black color. After decanting, this wine releases aromas of red fruits (blackcurrant, blackberry) complexed by garrigue plants. The palate is silky, marked by powerful and velvety tannins. The explosion of flavors is dominated by licorice, violet with touches of chocolate.

Food and Wine Pairing: Grilled meats, meats in sauce and game... Beef bourguignon, mutton stew, hare stew, leg of venison, wild boar stew, rib of beef, veal kidneys, beef or wild boar cheek stew, bull gardiane, grilled andouillette, veal paupiettes, hot sausage with red wine, stuffed partridge, veal with forest sauce, Saint-Nectaire, baked Camembert... and many other pairings depending on your imagination and culinary talents!
