Terroir and Vinification: Limestone terraces - South/South-West facing slopes - Old vines - Yield 35 hl/ha - Traditional vinification using separate grape varieties. - Long macerations of 15 to 20 days. Extraction work using racking and punching down exclusively. - Aging in our cellars in oak barrels (20%) and semi-buried concrete vats (80%).

Tasting: Deep color with purple highlights. Complex nose of morello cherry, violet, and licorice. Beautiful freshness on the attack with aromas of blackcurrant. Full and fleshy palate with velvety tannins. A very harmonious wine with a long finish sprinkled with notes of mocha. Wine ready to drink but which can be left to forget for 5 to 7 years in good aging conditions.

Food and Wine Pairing: Grilled meats, meats in sauce, game, cheeses... Braised rib of beef, duck with olives, Navarin of mutton, roast pork, veal kidney, Provençal snails, roast pigeon, shoulder of lamb stuffed with herbs, sweetbreads with morels, Saint-Nectaire, Bleu d'Auvergne, Tome de vache, Picodons and other small goat cheeses.....and many other pairings according to your imagination and your culinary talents!
