Terroir and Vinification: Rolled pebbles - Old vine established in goblet form and planted in 1939 - Yield 30 hl/ha - Manual harvest at optimum ripeness. Total destemming. Traditional vinification in semi-buried concrete vats. Long macerations. Extraction work by daily racking only.

Tasting: Atramentous color, an image of the power of the wild boar. At first glance, the label leaps forth... pepper, very ripe and crushed black fruit, thyme, fennel, toasted pine nuts. A slightly musky scent reminds us of... "Arômes Sauvages". Finally, on the palate, what a surprise! The attack is smooth and fleshy. Dark chocolate, mocha, and empyreumatic aromas of graphite and spices contribute to the pleasures of the senses.

Food and Wine Pairing: Decant generously to further open up this promising and admirably unusual wine. Finally, a wild boar and a rabbit that... well, indulge yourself and enjoy without thinking! A wine that can be forgotten for 5 to 7 years under good aging conditions.
